I helped open Paris in September 1999, with all its French-themed or a hint-of-France restaurants, but they are slowly going away, as are the original stores. I get that things change, but having the original things in a themed resort, is what makes the resort special. I believe that the only truly original restaurant that is left is Napoleon’s, but even that one is far from its original purpose. The restaurants at Paris started changing when Harrah’s took over, so many years ago. The first restaurants to change was Les Artistes Steakhouse, which is now a Gordon Ramsey Steakhouse. I think remodeling rooms and spending money on the property is what makes the resort special, not getting rid of its theme, and Paris is slowly losing its theme, but only through the Caesars’ restaurants. Other great restaurants at Paris that have staying power are Eiffel Tower Restaurant and Mon Ami Gabi, both have been Paris staples since opening.
