A bit controversial. Patagonian and Antarctic toothfish (what Vegas restaurants sell as “Chilean Sea Bass”) are no longer endangered, just overfished. There are plenty of workable substitutes, but many restaurants still refuse to put “Chilean Sea Bass” on their menu bc of the name baggage. More importantly, the Alaskan King/Snow Crab harvest has been cancelled this year by the Alaska Dept of Fish and Game (Google it). There aren’t enough to sustain the population. Plenty of pesky King crabs in other areas of the world, but not sure how one legally gets them from Alaska through Oct 2023. This impacts a lot of Vegas restaurants this year, not just Lotus.
